Corn and broccoli fritters

corn and broccoli frittersMy husband is about to go fishing for the evening so I thought I would make him a tasty, healthy treat that he could just snack on while in the boat. Here is what I came up with, corn and broccoli fritters. The kids also love these and they can be served hot or cold. They are great for lunch boxes too.

MAIN INGREDIENTS

1 egg
125g can corn kernels
50g broccoli, finely chopped
1/2 small onion, finely sliced
1/2 cup milk
1/2 cup grated tasty cheese
sprinkle of fresh parsley to serve
wedge of lemon

IN YOUR CUPBOARD

1/2 cup self raising flour
cooking oil spray
salt and pepper to taste

METHOD

Whisk egg in a medium bowl. Stir in corn, broccoli, onion, flour, milk, cheese, salt and pepper.

Spray a large frypan with oil and pour 1/3 cup batter into heated pan. Cook approximately 2 minutes, turn and cook until slight browned. Repeat with remaining batter.

Serve with a wedge of lemon.
