I’m in Cairns for a holiday with my kids, dad and sister. We went down to The Esplanade to swim and came across the Tropical Wave Festival being held at Fogarty Park. More than 40 cultural communities take part in the festival including many food stall vendors. The kids wanted to swim and weren’t too hungry, so my dad and sister offered to look after them while I checked out the food.
I was not disappointed. I came across an Indonesian food stall and could not pass up the chicken satay, pickled salad and rice topped with the most amazing peanut sauce. It was absolutely divine.
Here is my quick version of peanut sauce.
1 cup peanut butter
1/3 cup lime juice
1 clove garlic, crushed
1 (440ml) can coconut cream
2 teaspoons fresh ginger, grated
IN YOUR CUPBOARD
3 tablespoons soy sauce
1/2 tablespoon brown sugar
3/4 teaspoon cayenne pepper
Put peanut butter, lime juice, soy sauce, brown sugar, garlic, cayenne pepper, coconut cream and ginger in a medium size saucepan.
Stir over high heat until all ingredients are combined.
