Recently I had an abundance of tomatoes growing in my backyard and didn’t want any to go to waste. We put so much effort into looking after them, covering them with a net, checking for bugs every day and picking them as soon as they started to change colour. We had so many so that I posted on my Facebook page asking my likers what they would do with them. Because they were home grown they were filled with flavour so many suggestions came through for salad. Here is my version based on many of the responses I received.
MAIN INGREDIENTS
2 large tomatoes, sliced
1 cup rocket
1 cup baby spinach
1 small spanish onion, sliced
1 garlic clove, chopped finely
IN YOUR CUPBOARD
2 tablespoons Balsamic vinegar
1 tablespoon olive oil
METHOD
Arrange all salad ingredients on a serving plate. Mix together the garlic, balsamic vinegar and olive oil, pour over salad and serve.
