1 large zucchini, grated
1 large carrot, grated
1 onion, grated
250g haloumi cheese, grated
2 tsp lemon zest, grated
2 eggs, lightly beaten
1 tablespoon chopped dill
IN YOUR CUPBOARD
75g plain flour
Salt and pepper
Add the grated zucchini, carrot, onion and haloumi to a large mixing bowl.
Add the flour, lemon zest, eggs and dill and stir to combine. Season with salt and pepper.
Form the mixture into 20 small patties and refrigerate for 30 minutes.
Heat oil in a large frypan and cook patties until golden. Drain well.
Serve with tomato and avocado salad and lemon.
